Winter treat


Apple crisp

Apple crisp is my all time favorite fall and winter treat! I spent countless hours experimenting until I found my perfect balanced Gastroparesis friendly crisp!
I find that almost everything tastes better when cooked slowly and over medium/low temperatures and apples are no exception.
I took 6 large peeled apples and sliced them into a dry non stick frying pan, adding cinnamon, nutmeg and a 1tsp vanilla I let them simmer on low for close to 15 Minutes stiring occasionally. ( I add 1/2 cup raisins for the kids but pick mine out).
In a medium bowl I mixed 2 cups quick oats ( I find whole oats to difficult to digest), 1 cup almond meal, 2tbs cinnamon, 1tbs nutmeg, 2 tbs coconut sugar (optional) or 2 tbs maple syrup, and 1/4 a cup egg whites. I tossed the mixture until well Combined.
Pour the cooked apples into a baking dish and  topped it with the crisp. Bake 350 for about 30 minutes until bubbling and slightly brown- remove and enjoy!
The Apple Crisp does refrigerate well! 
Adding a few tablespoon of 0% Greek yogurt to a bowl of crips makes for a delicious meal.

11/25/13 dinner

Last night my family and I enjoyed a venison dinner. I steamed the green beans to the point right before they turn to mush for myself and reduced down the fresh cranberries with honey until they were jelly like. The sweet potatoes I roasted whole then sliced into pieces. Venison was grilled with salt and pepper. 
I was able to enjoy this meal without any negative side effects. I realize green beans and cranberries are not on everyone's "digestible" list however I find when they are cooked to the point of baby food I can tolerate them well.

1 pound green beans: steamed until soft ( extremely soft for me)
3 sweet potatoes bakes at 375 until soft then sliced
2 pounds venison sprinkled with salt/pepper and grilled five minutes per side on medium heat
1 bag Cranberries cooked on low heat with 1 cup water and 1/2 cup honey until reduced down to jelly about 30 minutes.

Welcome to my blog !

I was recently diagnosed with idiopathic Gastroparesis at the age of 30. And I  was shocked by how little information is available about this condition especially dietary. I was dismayed by the diet restrictions and limitations i was told to adhere to. So I decided to find a more feasible, delicious and healthy way to cook for myself. Most days I can honestly say I eat yummy well balanced meals. There are days when juicing, smoothie and baby food packets are all that sit well. Luckily those days are rare and quickly pass.
In the past few weeks I have gotten in the habit of taking pictures of my meals mostly as a reminder of what worked, what didn't, and to trigger ideas for improvement. I cook only with what I consider whole clean foods, however I feel like the term "clean eating" has taken on a life of it's own. Numerous fitness bloggers state that they eat 100% clean. I however do not agree with Quest bars, various shakes, energy boosting supplements, dehydrated peanut butters etc as being "clean".
I cook "clean" by my personal definition :) whole ingredients, as many unaltered ingredients  as possible, simple, easy, and tasty!
